Recipes for self-making

SPITZBUBEN Gluten-free:

Ingredients:
500 g flower of rice
250 g butter
150 g sugar
16 g of baking powder
2 eggs
1 of vanilla sugar
1 pinch salt
peel of 1 lemon
apricot jam

Beat together the butter, sugar, egg and salt.
Sift the flour into the wet ingredients and work into a smooth dough. Wrap the dough in plastic wrap and put it in the fridge for 1.5 hours.
Knead the dough again and roll out onto a lightly-floured work surface to about 3mm. Cut out circles with a diameter of about 6cm. From half of the circles, cut out a small star. Preheat the oven to 200°C (top and bottom heat). Place the circles and little stars on a baking-paper-lined baking pan and back on the middle rack of the oven for about 8-10 minutes. Let cool. Spread a little on each of the circles and top with one of the circles with a star cut out. Create little sandwiches with the stars in the same manner.
Have fun cooking!
